ORGANOLEPTIC CHARACTERISTICS:
The bacon is characterized by its delicate taste, very strong flavor, with a light aroma of red pepper. On the palate, the lean part and the fat part blend together first and then melt together at the same time. The taste first reveals a sweet sensation typical of the lard in contact with the palate and then the strong, tasty and flavor of the meat, everything ends with the union of flavors. The salting process to which the bacon is subjected is free of spices, smells and flavors are all indicative of a long life outdoors and high animal welfare. It is a whole cured meat with a compact consistency, the lean part and the fat part are moderately balanced. The sizes range from 0.4 kg for slices to about 3.50 kg for the whole.
