ORGANOLEPTIC CHARACTERISTICS:
The cheek is characterized by its delicate taste, a delicate flavor that gradually spreads and invades the taste buds until it completely melts at body temperature, it is a unique and fundamental product for some typical Italian cuisine. Before maturing, the product undergoes a brine in a tank without the addition of spices, only a little sweet red pepper is added as a cover before entering the maturing process to preserve it naturally from external agents.
It is a whole seasoned salami, the consistency is very compact, the fatty part is about 50% of the anatomical cut. The sizes range from 0.70 kg to about 1.7 kg.
